Recipe #2: Creamy Salmon with Wholewheat Tagliatelle

An easy healthy (ok, maybe not with double cream) meal that fills you up and hits the spot. This creamy salmon is rich but not too heavy and is perfect for those summer evenings where you want something quick and light; it is also really cheap, bonus! This recipe can be adapted to make as much or as little as you need or why not try chicken instead of salmon...completely up to you.

Serves 2
Prep Time: 10 minutes
Cooking Time: 20 minutes

Ingredients
2 tbsp Olive Oil
1 Large White Onion
2 Cloves of Garlic
150ml Double Cream
200g Salmon
5 Nests of Wholewheat Tagliatelle
Black Pepper To Taste

1. Cook the wholewheat tagliatelle as per the packet instructions, usually it takes around 10 minutes to cook
2. Whilst the tagliatelle is cooking, peel and chop the garlic and white onion
3. Drain the wholewheat tagliatelle, put on a serving dish or in a bowl and keep warm
4. Using the same pan you cooked the wholewheat tagliatelle in; put in the oil, onion and garlic. Keep these on a low to medium heat and continuously stir until the onions are soft but not brown
5. Chop your salmon into cubes. Put the salmon and cream in the pan with the onions and garlic and stir.
6. Keep on a low to medium heat and stir until the salmon has cooked, around 5 minutes. Season with black pepper to taste.

What I'm Loving ... The Body Shop Body Mists

I know, I know this post is late but I have been super busy and only got back from my holiday a couple of days ago, please forgive me. 

I first tried these body mists from The Body Shop about a month ago and have fallen in love with them. They are refreshing, long lasting and look pretty on your shelf too. The two I have are Moringa; a fresh, slightly musky, "clean" scent and Satsuma; which says it all really - this smells like Satsuma's but not too over powering and actually quite calming. 

You can find these Body Mists at The Body Shop online here and they all retail at £7.50. I have tried a lot of body mists from different brands and stores and this is definitely one of my all time favourites. They have a lot of scents to choose from including Vanilla, Coconut, Strawberry and many more. 

Short but sweet post today but I promise I shall get back on track and post some more this week. Let me know if you have tried these and what you think xx

What I'm Loving ... Coloured Trousers

Ever since SS14 came around the corner I have been loving all things colourful and bright. I am also a sucker for anything floral so flowers and bright colours are always in my basket when I am shopping, whether that be in-store or online. Here I am sharing my colourful trousers and debuting the first pictures of myself on my blog! 

The navy blue pair are so comfortable they could be pyjamas! They are a denim - slash - trouser material and can be worn with everything. The floral print trousers are a thicker trouser material with a kind of "smudged" print. Finally, the cobalt blue trousers are your typical work trouser material. FYI if you are going to buy these ones then I advise sewing, or getting someone who knows how to sew, over the stitching of the crotch. The seams are loose on two pairs of these I have tried and no one wants to end up walking around in ripped trousers. Both the floral print and cobalt blue trousers are also a perfect length for me and I am only 5ft 2in, so if you are taller (or average height) they may be cropped.

Unfortunately I can't find the Zara ones now the sales have started but I have linked similar some similar.

Recipe #1: Weekend Two Bean Chilli and Brown Rice

This is my easy and healthy Weekend Two Bean Chilli with Brown Rice. It is an adaption of this recipe from Food Network but with a few less ingredients and a few shortcuts. This was my first time cooking this and it is so good that it will probably live up to it's name and be made every weekend. This can serve however many people you like and the heat can be mild or as spicy as you want it so it is completely adaptable to all tastebuds. It takes no time at all and if you already have cooked brown rice, maybe left over from the day before, it is so easy to whip this up in around 15 minutes.

Serves: 2
Prep Time: 5 minutes
Cooking Time: 15 minutes with cooked rice/45 minutes with uncooked rice

Ingredients:
1 Small Red Onion
1 Vegetable Stock Cube
2 tsps Hot Chilli Powder
1 tsp Chinese 5 Spice
1 Carton of Chopped Tomatoes with Olive Oil and Garlic
1 Tin of Red Kidney Beans
1 Tin of Black Beans 
1/2 Cup of Uncooked Brown Rice
A Little Oil

1. If the rice isn't already cooked then measure and heat as per packet instructions. Typically 60g per person for 25-30 minutes until almost all the water has gone.
2. Whilst waiting for the rice to cook chop the red onion, drain and wash the beans and open the tomatoes.
3. Once the rice has cooked put in the serving dish and cover with a plate to keep warm and moist.
4. Rinse and dry the pan then add a little oil. Soften the onions on a medium heat for around 3 minutes then add 1 teaspoon of Chinese 5 Spice and 2 teaspoons of Hot Chilli Powder. The seasonings will dry on the pan so stand back, turn down the heat and add 1/4 cup of warm water. Tip: if you do not want this chilli spicy then add a Mild Chilli Powder or maybe just 1 teaspoon.
5. Continuously stir on a low heat and add the Vegetable Stock Cube. Stir for around 4-5 minutes until all the water as reduced.
6. Add the tomatoes and beans and turn the heat back up to medium to allow to warm up for 5 more minutes. This is where you can add more heat if you need to.
7. Spoon the Chilli over the Brown Rice and enjoy!
